In terms of grade, it really comes down to personal preference.
Amber Color, Rich Flavor is often used as a topping for pancakes, oatmeal and yogurt or as a mixer in cocktails.
Dark Color, Robust Flavor (formerly Grade B) tends to have a stronger maple taste and is often used for cooking and baking.  But either grade works for any purpose.
